Chassagne-Montrachet 1er cru Clos Saint Jean The grapes have been picked the 4 November between 8am and 9am, have spent then 6 days in vat at 12 degrees. Now it is slowly warming up, and we start to work on it with punching of the cap, and pumping-over. The colour is already intense, and we are waiting for the end of fermentation for tasting the wine before devatting.
