The alcoholic fermentation of the white wine takes place in the barrels using natural yeasts, and lasts for about 3 weeks. The red wine is put in tanks for between 15 – 17 days with a cold pre-fermentation maceration, alternating pumping over and cap-punching. Maloclactic fermentations took place during winter, the last at the end of January.
